Spices are a commodity found in every home around the world and often are used multiple times each day. The variety of spices is often only limited by the imagination. Each separate fragrance, color and taste is the result of a myriad of chemical interactions and reactions that gives each spice its own special character and place in our lives. Adulteration, counterfeiting and contamination of spices have dominated the headlines.
